As the winter season is going on and we all know that this is the best time of the year to nourish our body with all the goodness of food choices, we have on our plate!
One of them, winter's speciality which our ancestors used to enjoy is BAJRA or called as PEARL MILLET.
Today's digital-modern world might look extravagantly charming but it's also kind to understand the nature and food traditions our forefathers had, to enjoy a healthy and sustainable life.

On this new year's day, i would bring to you a very simple, quick and really easy recipe to enjoy Bajra this season.... So you cherish your body with wholesome nourishments this winter season!
We often compromise our nourishments with excuses like - "oh! I don't have enough time to cook"....."oh! I don't get healthy food choices around" and also like..... "eating healthy is expensive!" And so on.....
But today we are going to burst these myths and free ourselves from those excuses and understand that, you can make wholesome nourishing food by yourself which consumes:
→ As less time as 20 mins,
→ Available at every sigle kirana shop near you,
→ Available at every online indian store,
→ And yes....it is inexpensive by price but yes highly expensive by it's nutritions qualities!

👉 Is a millet which is gluten free like most millets makes it a suitable choice for people with celiac disease or those following a gluten-free diet .
👉 Is a nutrient-dense source of protein, carbs, vitamins, minerals, and beneficial plant chemicals.
👉 Including bajra to your diet can affect weight loss, improved diabetes management, and a higher intake of nutrients that support healthy hair, nails, and skin.

Even after knowing it's high nutritinal value ,alot of people don't know how to incorporate this healthy millet to their diet.
Solution...
Today i am sharing a very simple easy and very healthy recipe of bajra, which whole family can enjoy, even a fussy child or people with digestion issues.
As this is very light on digestion and because it is naturally fermented we are even sure that our gut is getting good probiotic which leads for better digestion....

And apart from that, you don't need much of ingredients....

So let's go forward and find out the ingredients we need:
1 CUP BAJRA/PEARL MILLET
1/4 CUP SLIT BLACK URAD DAL
1 TSP METHI DANA/FENUGREEK SEEDS
3 TBSP POHA/COOKED PLAIN RICE
SALT TO TASTE
Now let's figure out how to prepare batter for fermentation:
➤ Wash bajra, urad dal and dana methi with clean water for 3 times and keep straining, now soak this mixture in double the quality of water for atleast 6 hours to maximum 8 hours
➤ Afterwards strain water from mixture and add poha (washed and soaked in water five minutes prior to the process) or pre cooked rice
➤ Blend in mixture all of them untill it comes to fine paste like consistency, keep adding water to blend the mixture, the mixture should not be too thick or thin consistency, it should be pourable idli batter like consistency
➤ Now tranfer into another container, make sure container is big enough as batter will ferment and take some extra volumn
➤ Add salt and mix all well for 3 to 4 minutes using your hands, its important to use your hands as the good bacteria of your hands will help the batter frement well.
➤ Cover with loose lid and keep the batter sit in a warm place for 8 to 12 hours, it depends upon the weather conditions, it might take upto 18 hours also at some conditions
➤ Once the batter is approximately doubled up, you can start making spongy idlis, dosa, set dosa of your choice
Notes:
⭑You can store this batter for upto 3 days in refrigerator and enjoy whenever needed!
⭑You can make idli, dosa or set dosa as per choice.
